I fully understand what you mean, and in the past I've even actively supported that point of view, but Ken has chosen to go another way, so it's just not allowed. Except locally, of course. Ken specifically instructed us to use "the most-credited" form, which, as documented in this thread, is "Mei Melancon". For (online) DVD Profiler purposes, we don't care about what someone's "real" or "correct" name is - it's just about what the person is mostly credited as.

In the official website, the only thing I read is MEI MELANCON, which is Mei Melançon, as Mei took the name of her french mother. (Melancon sounds quite obscene in french...)

You can do that in your local, but Ken has already ruled on this for the main db.  For Profiler purposes, 'C' = 'c' and 'Ç' = 'ç'.  'C' does not equal 'ç'.

It's a shame he overruled Gerri, because I liked her ruling better.

Agree, and in this case, it's more important with the obscene phonetical meaning of Melancon (post in (slang term for vagina)).

That's why on a "third party" site, it is precised how her name is to be pronounced:

There was no overrule.  Gerri's statement was misinterpreted to turn capitalization rules into something more than what it was meant.

IMDb is not 'proper documentation'...especially since they contradict themselves.  She is listed as 'Mei Melançon' but, in her Mini Biography it says, "Mei Melancon was born in the Philippines..."

Like it or not, Ken ruled on this back in May, and just reinforced that ruling in this thread.  The only way that 'Mei Melançon' can be entered is if she is credited 'Mei Melançon' or 'MEI MELANÇON'.
